Eggnog Fudge
1/8 cup butter, chilled
3 cups sugar
1 cup eggnog
6 ounces white chocolate chips
1 1/2 cup mini-marshmallows
1 cup almonds, chopped
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
Line a 9″ x 9″ pan with aluminum foil and set aside.
Spray the sides of a large saucepan with butter-flavor non-stick spray. Add the eggnog and sugar, and bring to a rolling boil over medium to
medium-high heat, stirring constantly. Boil for two full minutes.
Fold in the marshmallows, cinnamon, and nutmeg. Bring back to a
rolling boil for another 6 minutes, stirring constantly. The mixture
will start to turn brown, which is normal, but if you see brown
flakes in the mixture then turn down the heat a little. Remove from
heat and add the butter, chips, and nuts. Stir until thoroughly
mixed or until the mixture starts to lose its glossy appearance.
Pour into prepared pan. Cool at room temperature. Remove from pan,
remove foil, cut into squares.

I *JUST* walked in the door with all the ingredients to make it... I'm off to the kitchen!! I'll let you know how it turns out... and what mess rating it gets.

Ok, I made it!!!! It is still setting up, but I licked the spatula, and oh, my, goodness!!!!! I can't wait to gobble it down and make my butt fatter!
It wasn't too messy to make, only thing, use a huge pan. I started out with a 2 quart pot (I think) and it wasn't big enuf, so I had to dump it into a bigger pot while cooking. Once it starts to do the rolling boil thing, it gets bigger. Then watch out! When it's boiling like that, it pops out and is sticky, and if your in nothing but a t-shirt you will regret it. Trust me on this one. WEAR PANTS.
Um, oh... yeah. 6 minutes of stirring constantly will break your arm. So focus on the prize (the spatula at the end) to keep your mind off the pain.
Oh, and I forgot to put the freeking nuts in mine, so maybe next time... hang on, I'll snap a picture...

OMZ!! It is SO good!! I cut some squares and will be taking enuf to work today for everybody in the office to have a bite :grinn:
